La Pâtisserie Des Rêves – Transforming memories into cakes!

LOCATION

La Pâtisserie Des Rêves – Parisian patisserie, renowned for its modern take on the great classics of French pastry, has made its debut in Yas Mall, Abu Dhabi and this beautifully designed flagship is located in the heart of the cutting-edge Tryano department store that leads the mall’s exciting retail portfolio.

ORIGIN & BACKGROUND:

The much-loved concept, which currently offers a global network of venues across Paris, Japan and London, was founded from a special encounter between Philippe Conticini, the talented pioneer of contemporary French pastry and Thierry Teyssier, founder of Lever de Rideau and Maisons des Rêves. Their mutual passion for French pastry led them to create La Pâtisserie des Rêves in 2009.  Their inspiration was to bring back pastry to the taste of children and to create new gourmet memories by revisiting and modernizing the great classics of French patisserie.

LAUNCH EXPERIENCE

Our experience at the launch was remarkably beautiful as soon as we enter through the doors, La Pâtisserie Des Rêves immediately escorted us on a magical gourmet journey, reminiscent of wonderful childhood experiences.
Our favorite offerings from night includes:
The healthy Salads:
• Pan-Fried Halloumi cheese salad with figs strawberry and toasted pistachios and dressed up with pomegranate and balsamic dressing
• Watermelon with feta cheese with balsamic reduction.
In main Course I went for marinated Humor fillet, duo grilled zucchini with saffron rice.

In Desserts

The Paris Brest, a choux pastry with frothy praline cream and a rich liquid praline center, it was Kaby’s favorite from the evening and it so enticing to know the whole process of baking the same as explained by Thierry. Saint-Honoré, one of the greatest classics with a crunchy, melt-in-the-mouth flaky pastry and rich caramel choux pastry,
Éclair chocolat, created by Philippe Conticini for true chocolate lovers, that offers plenty of character, but without bitterness or sourness. It is so magical and heavenly.

The brand promises a unique immersion into a gourmet world where pastries are given a theatrical setting and each has a story to tell. We loved the childhood memory train passing through the store and giving this touchy feeing specially for those tiny diners entering the eatery. Tall walls of cheery and sensualist citrus colors takes you back in best era of your life i-e Childhood, Oh and those iconic bell jars and multi-colored pastries. The complete avenue is a fairytale in itself and the whimsical interiors will delight gourmands of all ages in the capital.

Interview of Thierry Teyssier, Founder

• Tell us about how it is all started? History your past and current ventures? I decided to create my hotel in morocco as it’s my world and my country and I love Arabic food & world. Closer from Paris was Tunisia, Algeria and morocco. I like to be rooted with Asia and with my background, as I has great weather, amazing landscape, gastronomy and history and 3 hrs. from Paris. Everything was done to create something special for new ideas for hotels and cakes were created. And then when I work with chef when I open my 2nd hotel in Portugal fillet Conticini created signs of menu, after that me and Chef became friends and we decided to work together and created something as around cake in Paris. • What is the concept behind the chain? Memories!! Which we all love so there come the concept of it because 7 years ago, when we started it was difficult to find cakes from childhood memories. You may found amazing but complicated adult cakes but they are not from your past or youth. • Why memories? I believe it must be a link between two generations. I still remember the apple pies of my mother and grandma in our kitchen. • So is it because of loving memories and LOVE? And is your passion is now your business? Love is the connection yes of course I totally agree and that we decided to recreate this connection. It was a side business initially and the idea was just to create pleasure for us and few guest but now it’s worldwide and it’s unique. • What your favorite childhood memory? Does it roll through generations? When I was young my mother has special recipe for crepe she put milk, some orange and lemon water it use to be very light and the smell is amazing. She use to wake up earlier before anyone on that special day of year to create those special memories for all of us. Laters with my children I decided to make French toast in those special occasions and now my kids wish to have the same at special times when they have exams and all. • What are your prevailing and close-to-heart projects and ventures? Now we launch a book in Paris with 50 famous people, they Are from gastronomy actor, chef and other celebrities we asked their childhood recipe and recreate them so 50 people 50 memories and 50 recipes. • What is your aim to serve your customers? Good moments I believe. You can laugh and cry both related to your food memories specially with cakes. For every memory there is a cake and we are reconnecting. It’s beautiful as your taste buds let you travel back in time. And I want all children & families to cherish their memories. • Let’s talk about brand? Branches? First shop opened in 1st September 2009 in Paris now 6 there 2 London 2 Japan 1 in Milano one in this spring in Dubai in City Walk. Also soon in Seoul, south Korea, and in Beirut, Tokyo, and next in New York city. • What’s your favorite menu item and venue? It depends on my mood, when I am on terrace and tea room in our shop in Paris. We have small venue of 5 table and small secret terrace garden. I also like our 1st shop thought its crowded all day long. I also like special cooking classes for kids on special birthday parties, I like chocolate Merlin every day. Memory train is very special for me too. In Japan we open our shop in Machia and it has spiritual garden that’s a cultural mix between Japanese and le patisseries • How to connect French Zen with Arab Aura? We will bring soon a lot of recipes with fusion and also will introduce some specific cakes which will be memories of UAE culture and memories. I love the culture and traditions amongst family here they are rooted they spend weekends and shopping together in groups with friends and family. It is important to have fine dining.
